For the in-house restaurant, the Hôtel de Nell chose a lavish, liberal, and down-to-earth concept: bistronomy. With its multiple-choice prix-fixe menu (€37 for a three-course meal), La Régalade invites you to savor seasonal, local or old-fashioned ingredients transformed into simple, traditional recipes. In addition to the established menu and based on the fresh market items purchased that morning, slate menus list the day’s suggestions, all gourmet reinventions of the dishes our grandmothers served with pride. Le Chef Bruno Doucet
By doing duty in the kitchens of Pierre Gagnaire and Charles Barrier before becoming sous-chef to Jean-Pierre Vigato, Bruno Doucet learned the ropes before taking up the reins at La Régalade in Paris’ fourteenth arrondissement. In 2010, he stayed the course and signed with La Régalade Saint-Honoré and now offers his interpretation of the menu at La Régalade Conservatoire with a new twist: a unique, revisited bistro décor by Jean Michel Wilemotte. His philosophy: bistronomy! A skilful concoction of local products of only the highest quality, and the culinary technique practiced in the greatest multi-starred establishments. Everything is prepared with simplicity and finesse, creating dishes with flavours that bring back memories and values, redolent with meaning and emotion.
The Cellar Library
A glass-enclosed wine cellar elegantly separates the restaurant from a library filled with dependable tomes carefully selected by the owners themselves.
This anteroom of the bar and restaurant is a place of secluded retreat for hotel or La Régalade guests, whether for a private dinner, a meeting, or simply taking in the stillness of its cosy environment.

Like the Bistrot La Régalade, the bar serves mostly select French products from the 50's ad 60's – at times little-known, yet always top-quality – satiating the desires of any connoisseur with whiskeys, cognacs, and other spirits and liqueurs or French Vodka.
